Siamese cats have “points” because of a mutated heat sensitive enzyme that works at cooler temperatures but not at warmer ones. This causes partial albinism for Siamese cats over the main part of their body where they are warmest. The traditional color for Siamese cats is seal point- a very dark brown. Seal points that aren’t quite as dark and have more of a chocolatey color are called chocolate points. How palatable.
